Hi Lee and Shari ! Just following up on our Thanksgiving breakfast - it turned out wonderfully! We love this recipe and my 10 year old loved preparing it for the family. I can see many school morning breakfasts of slow cooked oatmeal and various types of fruit or peanut butter to add on later. The dried cranberries and dried apricots lent a sweeter flavor to the oatmeal than I typically care for, but it was just perfect for Thanksgiving day ; ) My 9 year old daughter and husband really enjoyed it and are looking forward to the next batch. Thanks for sharing the recipe.
That pumpkin pie recipe sounds amazing! Just yesterday I was pondering the making of a pumpkin pie with a graham cracker crust (the regular pastry crust just doesn't do much for me) but gingersnaps, that's one step better. Now I know exactly where some of the pumpkin puree I rosted earlier this fall is going. Maybe double it and put it in a 9 x 13...

Last year, somebody made a yam dish with goji berries and candied ginger. no marshmallows! I'm making my own version now, using Earth Balance and organic maple syrup to give it flavor, along with some cinnamon chips, a chopped apple, and toasted walnuts. even a little fresh ginger, minced, to give it that warming effect around the body- great for the cold weather.
I am thankful that Thanksgiving is the ultimate seasonal food holiday. Think about it - all the foods we eat are foods from the fall harvest, from squash and tubers to the animals slaughtered at the end of season. That is a great way to promote 'the cause.'
