Thanks for the comment, David! I've heard that as well, along with the fact that food preparation is incredibly important for pork. Super interesting stuff. Many of the rules we follow (or choose not too...) are based on the practicalities of the times. Somehow it still works. :-)

I once read - years ago so I can't give a cite - that one reason for pigs as being classed as "unclean" had much to do with the fact that in the area, water was often very scarce. Pigs take a LOT of water to raise and can do a lot of damage to a fragile desert ecosystem. Raising swine could very well have been considered a dangerous thing to do, to the whole community.

I've really enjoyed this series, Lee. Thank you so much for sharing it in today's Fight Back Fridays carnival. I usually skip Whole Foods and go straight to local farmers & ranchers (cheaper that way), but I do go about once every couple of months to stock up on things only they sell.

Thanks for the note! I will send the recipe (or post it here), hopefully yet today. And I totally agree with your point about access to foods that help ward off monotony and provide additional nutrients. My goal is to be more mindful when I make my choices - I want to eat the foods that are available locally from local places (largely because I think they taste better), and to expand my knowledge and consumption of local stuff for the same reasons. But I'm not giving up bananas, oranges, chocolate, coffee, turmeric, etc. No way.
