3 Things I Love About Corner Table's Scott Pampuch

If you're a local foodie in the Twin Cities, you probably already know about Corner Table. How could you not? Since it opened in 2004, Corner Table and its owner, Scott Pampuch, have been written up in every Minnesota restaurant directory, magazine, and website worth anything. Scott is well known for his commitment to local farmers and seasonal ingredients (last time I stopped by, he practically forced me into his freezer to see how many of the ingredients came directly from his farmers), and for being one of only a few chefs in town (yes, I'm also thinking about you, Mr. Russo), who freely, boldly, and constantly comments on the things that matter to him -- Minnesota nice be, um, darned.

Bow Down Before the Altar of Deep Fried Things on Sticks!

When Shari Danielson, our editorial director, recently asked me to share my "biggest food weakness," none immediately jumped to mind. Not too long ago, I might have answered conventional beef jerky, bad Asian food served in airports, unsustainable sushi, and/or gummy worms. But the joy of these foods has diminished over the past few years, and when given the choices these days, it's not that hard for me to pass.

My (amazing, wonderful) wife was quick to point out that saying "no" to these foods does not mean I don't have a food weakness. True, I'm not the guy who can't walk past the mini-donut stand without buying a bag, or the gal who sneaks a Big Mac when nobody's looking. My weakness is this: I love to eat things I've never tried before.

Upcoming Workshop Helps Chefs Put More Local Food on Their Menus

My first cooking job was at a small German diner on my hometown’s Main Street in Northern Minnesota. It was a hybridized place; we hand-pounded schnitzel cut from pigs the chef had raised, but we also served a dizzying number of filet-o-fish sandwiches. And when we ran out of green beans we opened up a jumbo can.

I remember a farmer knocking on the back door one day, carrying a lumpy paper grocery bag overflowing with fresh green beans. As the chef was shaking his head no, a few of us young cooks came up behind him and said, “We’ll clean them, chef!” The farmer, who was practically giving them away, handed them over. They were delicious, but the chef hated them because of the time it took his minions to top-and-tail their way through the bag.

Eating Local: A Trip to Riverbend Farm in Delano, MN

"Take these," Greg Reynolds says, handing me a handful of rubber bands and a clipper. 

"Ah, uh, mmm…," I stammer.

"They’re for the arugula," he offers. Pull 'em out and clip 'em just below the crown. Then rubber band 'em two times around." Maybe Greg doesn’t realize who he’s talking to, or maybe, more likely, he's having fun at my expense.

My CSA Day at Riverbend Farm

I recently had a chance to help the great team at Riverbend Farm in Delano, MN pick and pack their weekly CSA/farmshare harvest (they produce 80 shares each week). Riverbend is a terrific, well-respected farm, which provides foods to many local Twin Cities restaurants, including the Birchwood Cafe, Common Roots, Corner Table, and many others.
