Not long ago, my little boy was sick for a few days, so my usual cooking routine was interrupted. I absolutely don’t mind the interruption, and like having him home with me all day again, but I just hate it when my little ones are sick. Since he hasn’t been eating a whole lot (sore throat), I’m so thankful to have frozen broth at the ready for both the ease and the nourishment that it can give to him. I guess this is as good a time as any to post this recipe, then.

 

Making broth isn’t a new concept, but it seems as though the foodie/health world has rediscovered it lately. There’s a good reason for that. Making broth is simple and it offers so many healthy benefits that store-bought versions simply do not. They also taste so much better. Make a homemade broth and then do a taste-test with a store brand. I have. The difference is stunning.

Even though St. Patrick’s Day is half a year away, I’m going to try to convince you to make your own corned beef. 

 

The word “corned” was originally a term used for the word grain or kernel. It refers to curing beef with “grains” of salt. We eat this dish every couple of months. It’s so good that I can’t possibly make it just once a year in celebration of my husband’s (very minimal) Irish heritage. And for the record, this version is the best corned beef I’ve ever tasted. Full stop.

The Paleo Diet: What it Is and Why it Works

I’m on a very strict meal plan.

I’ve been eating grass-fed ground beef, steak skewers, pecan-crusted chicken, pork and fish. I’ve been eating eggs, sausage, yams, deviled eggs, cabbage slaw and curry. I’ve been eating spice-rubbed chicken, salmon salad, and pear salad with balsamic vinegar. I’ve been eating shrimp with red onion, garlic, green bell peppers, salsa verde and chili powder -- served with romaine lettuce leaves, spinach, mango and lime. My fridge is filled to the brim with fresh, local, and organic fruit and vegetables of all colors, and my freezer is full of grass-fed beef, turkey, lamb, and chicken. I haven’t been scrimping on fat, either. I cook my nutrient-dense meals with coconut oil and olive oil, and eat plenty of avocados and macadamia nuts and even a little bit of almond butter.

What’s missing from this list? Added sugar. Alcohol. Milk. Cheese. Grains. Legumes. I’ve decided to spend 30 days eating a strict Paleo diet.

Homemade Beef Jerky Recipe - A Guilty Pleasure Without the Guilt
