Get to Know Pulses. Recipe: Trail Mix

Vegetarian. Gluten Free. Heart Healthy. Often overlooked as an inexpensive source of protein and fiber, pulses can play an important part in your daily menu. Not familiar with the term? You may recognize them under their more common names: peas, lentils and chickpeas. Pulses are from the family Leguminosae, or legumes, which gets its name from the characteristic pod that protects the seed while it is forming. These tiny nuggets of nutrition have been grown around the world for thousands of years. There is even a non-profit organization, the Northern Pulse Growers Association, based in North Dakota and dedicated to the promotion and awareness of their nutritional benefits. Who knew?

Stuffing. Gravy. Pie. For those with celiac disease, the holiday feasts this time of year represent special dietary challenges. Celiac disease, an autoimmune disorder affecting approximately 1 out of every 133 Americans, is characterized by the body’s inability to digest gluten. Gluten is a protein found in grains including wheat, barley and rye. Unfortunately, health problems associated with gluten cannot be treated with a prescription. The only solution is a lifelong adherence to a gluten-free diet.

It’s more important than ever for those of us choosing the solo life to take control of our diet since there’s no one around to nag us about eating healthy. I was lucky to grow up in a household where my mom believed in getting a home cooked meal on the table for dinner and my dad demonstrated good eating habits by making breakfast every day.
