gilbert's offers contemporary American cuisine with a conscience. Chef Ken Hnilo believes in using the freshest, organic ingredients whenever possible, preferring those that are locally grown and raised. As a result, the menu changes daily. Dishes routinely feature such ingredients as sustainably raised meats, dairy, and eggs in addition to local, organic fruits, vegetables and herbs (some grown in the restaurant's own garden).
