According to Virgil and Carolyn Schunk - Gingerbread Jersey is a small, family-owned operation that makes a variety of classic and flavored cheeses from the milk of their Jersey and Holstein herd. All cattle are grazed on fresh pastures on the farm Carolyn's grandfather homesteaded. Products include cheese curds, colby, cheddar and flavored monterey jack. Gingerbread Jersey does not use any growth hormones, nor do they inject their cows with Bovine Growth Hormone (rBGH) to increase production. The cows at Gingerbread Jersey exercise every day if the weather permits. In the summer, they are given large pastures, and are rotated through them so the grass has time to grow. Almost all feed is grown on the farm, but any dietary supplements purchased are free of blood and other animal by-products. All varieties of Gingerbread Jersey cheese can be purchased at local stores or directly from the farm. Call for more details.
