According to Executive Chef Jerry Traunfeld - For 19 years, The Herbfarm restaurant has showcased the foods and wines of the Pacific Northwest. Each night the restaurant serves a 9-course dinner featuring the wonders of this region. Chef Jerry Traunfeld is the winner of the James Beard Award for "Best American Chef, Northwest." The Herbfarm grows much of what it serves, but is always interested in sources of high-quality Northwest produce, rare plants and animals, and native edible plants.The Herbfarm believes that no dish can be better than its ingredients, and that the best ingredientsare usually local. Freshness is ephemeral, and geography expresses itself in the taste of the food ??sometimes subtly and sometimes profoundly. The foods and wines of our region share a similar motherhood of soil and weather, making for happier culinary marriages than those from dissimilar climates. The Herbfarm believes that chefs whocook with local ingredients season by season, year after year develop a more complete understandingof the foods than chefs who do not. Thisunderstanding can give rise to greater expressionsof the food, its preparation, and enjoyment. TheHerbfarm believes that supporting local farmers, foragers, cheesemakers, and fishermen helps preserve local foods. The Herbfarm is open Thursday through Sunday evenings, serving a nine-course seasonal tasting menu with paired wines only.
