According to Mike Gingrich - Uplands Cheese Co. is a rotational grazing farm and cheese manufacturing business in Dodgeville, WI. Our cheese is made with traditional methods, using milk from pasture-fed cows, and is aged in a cave environment. We produce the award winning Pleasant Ridge Reserve. Our cows graze lush pastures from early spring through fall, just as all cows did before the industrialization of our food system. The resulting milk has better nutritional value and more varied and subtle flavors that are expressed in the delicate flavor profile of Pleasant Ridge Reserve cheese. The unique flavor of Pleasant Ridge Reserve is due to the combination of pasture-produced milk, the adoption of time-proven methods of cheese production, and a hand-crafted "old world" aging technique. Pleasant Ridge Reserve is usually eaten as a table cheese, excellent as an appetizer or a dessert cheese. Eating it at room temperature brings out the full depth and complexity of its flavors. Wait at least 45 minutes after taking it out of the refrigerator before serving. Pleasant Ridge Reserve is available for purchase online. To avoid having our perishable product in transit over the weekend, we ship only on Mondays, Tuesdays and Wednesdays unless you call us to request something different. Orders being shipped to IA, IL, IN, MI, MN and WI are sent by UPS Ground or Overnight (WI orders are shipped UPS Ground only). All others are sent by 2nd-day Air or Overnight Air.
