Viento

According to Stuart and Kathy Watson - Viento is a bistro-style dinner house, featuring a menu that draws from our love of the world's rich and varied culinary traditions. Viento -- Spanish for "wind" -- is a central fact of life here. It blows across the grasses that make wonderful and wild Kraus Honey; it warms the night air that grows Comice and Bosc pears; it riffles the creeks that water Kreps Ranch beef cattle. And it blows in new ideas, new people, new tastes. Viento honors all that the wind chooses to blow in. The menu will focus on fresh, local, and hearty, to feed the hikers, bikers, wine makers, sailors, kiteborders, ranchers, farmers and climbers who actively live in this beautiful place, side by side. The space is clean and open, allowing in the natural light that changes hourly in the Gorge. It is a casual environment, but with a sharp edged-perfection in the food. From hearty slow-braised beef ribs from locally raised natural beef to a vegetarian-inspired acorn squash filled with an Anaheim chili and goat cheese souffle, wind-loving diners will have as many choices as they do Gorge adventures. A full bar with local wines and microbrews, as well as outdoor summer dining will complement the menu. Not only does Viento feature the best of northwestern sustainable agriculture, but it also strives to achieve environmental sustainability in everything it does??? We have purchased 10 Green Tags from the Bonneville Environmental Foundation, to offset 100% of the greenhouse gas impacts of our estimated annual power use (we will adjust the purchase later to reflect any underestimation). ?? We save and compost through our organic suppliers all pre-consumer organic waste from the kitchen. ?? We save all fryer oil and donate it to a local cooperative stockpiling it as feed stock for their planned processing facility to create bio-diesel. ?? We recycle all office paper, cardboard, cans, plastic bottles, plastic bags and glass. ?? Our dining room tables use Kirei, a Japanese product that uses once-waste sorghum stalks with a non-formaldehyde binder. From June 12 to September 4, 2005 Viento is open 5pm to 10pm, Wednesday through Saturday. Viento is open from October to May on the same days from 5pm to 9pm.
