Thanks Jenny, I really like your post about the romanesco too. We've never cooked ours - always eat it raw, immediately. Even the kids absolutely love it. It's a bonus that it looks like it comes from Mars. :-)
Nice to hear from you all - Thousand Hills is doing such cool things, I'm very hapy to spread the word. How about the rest of you? Are there any other opinions out there? Anyone want to tell us how great corn fed beef is? Anyone?
My sweet potato or should I say yam recipe is super easy, but also very delicious... bake, peel and mash the fresh yams-- I used the food processor this year to mash the potatoes..then add 1/2 cup of butter and 1/2 cup of shallots that have been sauteed in olive oil. If you would like, you can add crumbled maple bacon on the top.
No marshmallows included and the kiddos even liked it!
This is my first season with a CSA -- Mine is with Featherstone too! My husband and I were really intrigued with the romanesco cauliflower. I used it in a chicken stir fry. It was delicious!
I had been pondering about what kind of ground beef to use in the Momo (Potstickers) that I sell at Midtown Global Market and after hearing about Grass-fed beef and its benefits, I have started to buy it from Thousand Hills Cattle Company. I have already received great feedback from customers who simply love the Grass-fed Beef Momo! :)
Thanks for this informative article Lee. Growing up in Nepal where fruits & veggies as well as milk & eggs were easily available aplenty in my grandparents' orchard and farm that used organic manure, I can easily connect with the important notion of eating local, organic and healthy foods. Oh how I miss those days! :)
I was luckily enough to sit with Todd & his wife at one of the Fresh dinners at Corner Table. I'm so impressed with what they have done & love to eat their beef of course!
Thanks, Lee, for the article. We love Thousand Hills and they are pretty much where we get our beef now. Being near Cannon Falls, it is nice to be able to just pick some up there. Looking forward to your next article.

Thanks Stephanie, that sounds great. Unless we're talking about hot cocoa, bacon ALWAYS trumps marshmallows in my book. :-)
