Shari- thanks for the comment and for reading! Nina Planck is a wonderful source. I really like how she breaks down the nutrition of real food, which is very effective against the low-fat and low-[fill in the blank] diet marketers.
I certainly hope big food companies can continue to be viable with real food. There is a part of me that thinks companies like Pepsi and Cargill need to be entirely replaced by better options, but I like to think there's hope for them yet. They used to make money selling something that is a whole lot more like food than they are now, so couldn't they do it again? Either way, there needs to be major reform in distribution (like Lee said) and in the expectations set for them.
