Mississippi Market Classes Promise a Fall Full of Fun

Mississippi Market is on a roll these days. Having hosted a terrific grand opening at the new Mississippi Market site just this past July, one might think that St. Paul's favorite locavores would take the rest of the year off. Think again, silly friends. Mississippi Market has recently published their fall calendar of classes. It's an impressive list, offering something for every locavore.

“It’s our goal to not just feed our members and neighbors physically, but mentally and emotionally as we empower them to live a more holistic life,” said Liz McMann, Mississippi Market’s education manager (she also writes the terrific blog Food Snobbery is my Hobbery). “Our upcoming fall classes are designed to equip people with knowledge and skills for healthy and sustainable living."

Here's a list of the classes offered by the Mississippi Market in the month of October. Mark your calendars - there's way too much to remember!

Cooking 101: Wok Hai
Wok hai means wok spirit, and it refers to the unique character of real stir-fried foods. In this 2.5-hour class you will make a stir-fried dish yourself using traditional techniques, including an infallible one for cooking fluffy rice. Vegetarian or omnivore, you'll enjoy a cooking method that is healthful, changes easily with the seasons, makes for quick, luscious meals after 9-to-5 workdays. Bring an apron and a container to take home what you've cooked.

Kombucha 101: How to Make the Divine Tea
Fermented foods have been used for thousands of years to bring good health to those that use them. This class offers tastes of many different variations of kombucha and instruction on how to make it.  Class fee includes your own starter culture and a 1 liter bottle of Kombucha Divine.

This year is the UN's International Year of Natural Fibers, and we celebrate it with wool—one of nature's most flexible, renewable resources for clothing and home furnishing. If you wear wool, knit, crochet, weave, or felt, this introduction to all things wool will improve your understanding of this fabulous fiber. Local fleeces, prepared-to-spin wool and handspun yarn will be available, along with time to play with and learn to prepare raw fleece for spinning.

Low-Tech Spinning: Make Yarn on a Spindle (H)
Learn to use a drop spindle, to prepare wool (or even pet undercoats!) for spinning, and to incorporate them into yarns. You'll learn how to process freshly shorn sheep fleece the old-fashioned, nontoxic way: no harsh chemicals, no burning, no acid baths—just soap and water to produce soft, light, bouncy wool to spin! Bring some of your pet's undercoat if you'd like to incorporate it. Wool and tools provided.

Don’t worry about dinner—you've got all the makings for a great, three-person pizza in the pantry and freezer, and it will take only 15 minutes of hands-on cooking to make a fresh, smoldering one. Using this simple pizza-building method from Berkeley's famous Cheeseboard Pizza and Jan's dirt-cheap, low-tech baking method, you'll be creating pizzas for less than $3 apiece that are far better than any you can buy. Bring an apron and a big paper bag to take home your share of the pizzas we bake (if we have any leftovers).

Cooking For Strong Bones (DT)
One woman in two over the age of 50 suffers from osteoporosis, characterized by thinning of the bones, which are fragile and easily broken because they no longer contain enough nutrients.  It is important to understand which foods to eat in order to have strong bones throughout our lives.  In this class you will learn which foods to choose and how to prepare them. The right foods can be a rich source of calcium and improve calcium utilization.
