Minnesota Cooks (and Eats, State Fair Style)

Your must see places may be pig barns and Fine Arts buildings. Or perhaps you're more of the Butterfly House and Minnesota Wine Bar type. One of my State Fair must-do events each year is the day when local farmers and talented chefs get together to create their little vignettes of deliciousness known as Minnesota Cooks. Each segment features two local chefs who partner up with two local/regional farmers to highlight their wonderful ingredients...what could be better?

It may sound a little boring if you're not into cooking shows, but I assure you this isn't just about the chef presentations. If you have time next year and are looking for a good excuse to sit down and rest your legs, this is the place. Not only will you walk away with a better understanding of the farmers and their work, but there's also the added benefit of free samples!

What did you have for dinner last night? Cold noodles and a banana? Me too. Got something planned for tonight? Bagels from Common Roots if the guys meeting in the conference room leave any over? Me too.

3 Things I Love About Corner Table's Scott Pampuch

If you're a local foodie in the Twin Cities, you probably already know about Corner Table. How could you not? Since it opened in 2004, Corner Table and its owner, Scott Pampuch, have been written up in every Minnesota restaurant directory, magazine, and website worth anything. Scott is well known for his commitment to local farmers and seasonal ingredients (last time I stopped by, he practically forced me into his freezer to see how many of the ingredients came directly from his farmers), and for being one of only a few chefs in town (yes, I'm also thinking about you, Mr. Russo), who freely, boldly, and constantly comments on the things that matter to him -- Minnesota nice be, um, darned.

What's Been Cookin' with Jenny Breen of Good Life Catering?

When I was asked whether I was interested in doing a profile on “local legend” Jenny Breen, I jumped at the chance. I didn’t know who Jenny was, but with a name like that – so lyrical and fresh – I knew I wanted to meet her. Jenny Breen, Jenny Breen. She sounded like a lass some lovelorn Irishman might sing about. She sounded like a lady who might know her way around a garden, might even wear a tiara made out of snap peas and scallions, carrots and asparagus. Yes, I said. Finding Space in an Unlikely Place: Minnesota's First Rooftop Farm

These people don't look like farmers, I thought as I met some of the staff of The Cornerstone Group, a local real estate development company that manages both retail and domestic properties. Colleen Carey, Cornerstone's president, was dressed in gauzy white, while her colleagues wore suit jackets.

“We had a presentation this morning,” Colleen explained. “We don't normally dress like this.”

She quickly proved she and her staff were unfussy and practical. As they guided me along the building, Colleen picked up stray bits of trash and leaves as she went. We entered a utility room with a dauntingly steep metal staircase to the roof of Kensington Park building. Topside, we looked over Richfield's business district. The view wasn't great, but I hadn't come for that. What I wanted to see was the Cornerstone Rooftop Farm, the first of its kind in Minnesota.

Recipe for Spring Egg Salad With a Twist

Bacon and eggs are my kind of salad. This simple, hearty, bistro toss up is perfect for Easter lunch or brunch. It makes a lively light spring dinner, too (but you’ll need lots of good crusty bread and perhaps some Shepherd’s Way Frisago as well). The sunny presentation is stunningly simple as frying bacon and poaching eggs. The fun is in poking the yolk and making a joyful mess of it all.

Though frisee is the classic green, I prefer peppery watercress (and with luck we may have some clinging to the edges of those burbling streams very soon). Toss in field greens or baby spinach if you like, a little sorrel and arugula as well. Some recipes call for lardoons, the fancy name for thick cut bacon bits (I prefer the thinner rashers, cooked crisp.) That said, the bacon makes this meal. Find the best from any of these local sources, and pick up some heritage pork, too.

Now We Know Our Farmers!

Last night's Simple, Good, and Tasty local food event at Lucia's was truly amazing. Sure, there was the menu, created by Lucia Watson herself and perfectly executed in every way. And there was the great service, attentive and generous. There was the opportunity to meet and mingle with an astounding collection of people, just over 60 of us in total. There was the beautiful setting, the terrific organic wine, and the t-shirts that Lucia sent us all home with that said, "We know our Farmers better than we know our Doctors."  But what really made the night so especially fulfilling wasn't any of that.

It was the farmers.

Last Chance to "Know Your Farmer" at Lucia's This Sunday, October 11

I can't remember an event I've been as excited about as the one I'm co-hosting with Lucia Watson this Sunday, 10/11. The Twin Cities' first official "Know Your Farmer" event, fittingly held at Lucia's, is a chance to meet - and eat with - some of the best, most interesting farmers in our state. Even better, Lucia has designed a menu entrely from the foods these farmers have produced.
